The arrival of spring and the Easter holiday combine to create a great opportunity to get together with family and friends for a special celebration. Easter egg hunts, plenty of chocolate, and the return to extended outdoor living are just a few of the things people look forward to each Easter. Here are some ideas on how to create a delicious coastal-inspired Easter brunch.

When it comes to coastal brunch ideas, you can’t go wrong with seafood. Shrimp is always a popular choice, especially along the Florida coast. Cumin-spiced shrimp tossed in a lime vinaigrette with mango and cilantro is a vibrant, flavorful dish that can be served as an appetizer, salad, or side dish. Alternatively, you can go with the classic southern favorite of cheesy shrimp and grits that always seems like the perfect dish to eat on a beautiful patio or back porch.

Crab is another seafood favorite that can be enjoyed in a variety of ways. Deviled crab that is a mix of lump crab meat, lemon juice, spices, and bread crumbs baked until golden, can be served in the shell for a special presentation or served in individual baking dishes. Either way, it’s a great taste of spring. Crab cakes are great on their own, but consider using them in another brunch favorite, Eggs Benedict. Use the crab cakes as the base for the poached egg and add in some extra spice and flavor to the Hollandaise sauce by incorporating some lime juice, ginger, and red pepper into the sauce.

Lobster and salmon are perfect for special occasions. A lobster frittata full of buttery lobster and fresh bell pepper and summer squash is sure to be a crowd pleaser. Another egg-based seafood option is smoked salmon scrambled eggs served over Asiago potato pancakes. Both of these dishes can also easily be made vegetarian by leaving out the seafood, while still offering up a delicious Easter brunch.

Easter brunch celebrations are sure to feature plenty of chocolate, but if you want a lighter end to your meal, consider a fruity parfait. Individual yogurt parfaits layered with granola, pomegranate seeds, fresh pineapple, and blueberries are a wonderful mix of bright colors and flavors perfect for any Easter celebration.
